My grandma always made fun of me for cracking eggs on the counter! We’re Greek but she would watch Italian cooking shows and be like “omg how did you naturally know to add this or that? You cook like an Italian!”

Man that's actually a great result, you did it almost perfectly. And that's not banal, lots of people change the recipe or make mistakes in the preparation. But if I can suggest you as an Italian, you shouldn't throw away the fat of guanciale. You should keep it and put it in the cream to give an extra flavour to the carbonara
